One of the techniques that I've used in the past is to engage with the market by talking about the business problem that your product or service is going to solve, without getting into exactly how you plan on solving it.
April offers an excellent post on pre-launch planning. In particular, I like her point that we should be talking about the issues, not the product. Hey, that's what we should always be doing. No one wants a product pitch; they want your insights into the problems. They'll get to your product soon enough.
